  • 6lb skinless, boneless pork belly
  • 6 tablespoon kosher salt
  • 2/3 cup white sugar
  • 4 tablespoon pepper
  • 4 teaspoon paprika difference
  • 2 teaspoon pink curing salt (aka Prague Powder #1)

Instructions:

  1. Make seasoning
  2. Rub seasoning on pork belly
  3. Cut into thirds, seal in vacuum bag, and store in fridge
  4. Store in fridge for SEVEN days, flipping bags every other day
  5. Set smoke to 200°, smoke until internal temp reaches 150°.
  6. Cool, slice, and enjoy
Smoker Notes: It was hard to keep the temp at 200°; back half of cooking was around 300°. I closed the top vent and it helped a little. Maybe try with less charcoal. Cool time took about 1 hour & 30 minutes. Also, notes can be added to the SmartFire app for each cook.
