- 6lb skinless, boneless pork belly
- 6 tablespoon kosher salt
- 2/3 cup white sugar
- 4 tablespoon pepper
- 4 teaspoon paprika difference
- 2 teaspoon pink curing salt (aka Prague Powder #1)
Instructions:
- Make seasoning
- Rub seasoning on pork belly
- Cut into thirds, seal in vacuum bag, and store in fridge
- Store in fridge for SEVEN days, flipping bags every other day
